Earthday, local foods and downtown. Hmmm, seems to be the catchphrase of late.But I think there’s a good reason, and certainly, a great movement behind that. As summer approaches, I look over my list of suppliers, growers and purveyors, and realize that yes, most of them are local and what a huge abundance of bounty we, as a community produce! I know that we in the downtown core of Courtenay, and actually all across the valley are talking more and more about being locally, community minded. So with the upcoming Earthday, what better way to celebrate than to look close to home and celebrate not only Mother Earth, but also all us peons who work, play and live here, in our valley.
So, Bison Tacos! Not a really new idea, but when I look at all that goes into it from foods produced right here, well, that’s neat! So we took Abuelos Corn Tortillas (GF) toasted them, threw a combination of Pattison Farms and Eatmore Sprouts Greens, Sunflower Sprouts, Island Bison Blade Roast (slow roasted with Pattison Farms Tomatillos and fresh rosemary right out of Danielle’s garden from home), topped it with Union Street Pico de Gallo and Smoked Crescendo Pepper Tree Island Yogurt.. whew! We figured lets celebrate Earthday in style with some Tapas!!. We’ll be offering this taco all week from the 15th to the 21st of April. Earthday is April 20th, but why waste a good thing? (or anything for that matter – think reduce, reuse, recycle!) Stop by Union Street for a local, all good, all natural, Pulled Bison Island Taco!!
